Skinny Funfetti Cupcakes

I am a huge fan of cupcakes and if I am going to make a healthier version I want them to taste like the real thing and these definitely do. These cupcakes only take two ingredients, and honestly you will not believe how moist and rich they taste.
{use a mixer to beat out the lumps}
{I used a 1/3 measuring cup to fill the cupcake liners}
{I love the taste of these without frosting}
Skinny Funfetti Cupcakes
Ingredients
1 box Duncan Hines Confetti Cake
you can use any cake brand I just think Duncan Hines and the diet pop taste best
1 (12 oz.) can diet cherry 7-up (or any diet pop of your choice)
For light cakes use a light colored diet pop
For darker ones such as chocolate use a darker diet pop ex. diet dr. pepper
Directions
• Pre-heat oven to 350 degrees, and line (2 (12 count) muffin tins) with cupcake liners.
• If you are using anything other then a 12 oz. can measure out 1.5 cups of pop.
• Beat cake mix and pop together until smooth and creamy.
• Pour cake mix into lined muffin tin, filling each with 1/3 cup of batter.
• Place the cupcakes in the oven and bake 18-24 minutes; or until a toothpick in the center comes out clean.

Whipped Frosting
Ingredients
• 1 (8 oz) Container Cool Whip
• 1 (8 oz) or use 4 oz. Sugar Free Vanilla Pudding Mix
• Food coloring if desired
Directions
• Whisk the Cool Whip and Sugar Free Vanilla Pudding together (and food coloring if desired) until the ingredients are combined. Be careful you don\’t over mix.
• Chill whipped topping until you are ready to frost the cupcakes.

I saw a strawberry version of these on pinterest & then made an orange soda version… they are delish! Was wondering about the calorie info & also if you could use regular. You answered all my questions!-caroline @ c.w.frosting

Just made these with Pillsbury Sugar Free Classic yellow cake mix with Sprite zero. (And even LESS calories!!) The cupcakes are AMAZING!!! So light and fluffy! I added the Fat Free Sugar Free pudding mix powder directly to the lite Cool Whip. Was I supposed to make the pudding first then mix the finished pudding into the Cool Whip? The frosting turned out great the way I tried it but was a little gritty. Still blown away by this whole idea!!! Melissa

Hello, I have my first batch of these in the oven now and I just have a question. When you said to fill the cupcake liners using a 1/3 of a cup measure did you mean fill them a 1/3 of the way full? I used a 1/3 cup measure and I only got 12 cupcakes? I can't wait to taste them and share them with my co-workers. Thanks so much for sharing this recipe. Heatherheatherc1027@gmail.com

This is my question too about the icing! I have made another recipe using this type of icing but you used the actual pudding mixed with cool whip not just the powder content so I'm not sure which route to go???Any response to mntomblin@gmail.com would be helpful! I plan on making them tomorrow evening!

I'm not sure about this recipe but when I have made this type of icing in the past, I used instant pudding mix added directly to the cool whip (in powder form).

I am wondering about the icing… Do you make the Pudding according to directions on box, then mix with the cool whip OR mix the DRY pudding mix with the cool whip??? I'm wanting to make these for my mom this weekend and for my kids next week… Thank you!Heathergodsangel1504@sbcglobal.net

I've made these!! They are amazing!! They're really good if you use a white cake mix and grape or orange pop!!

Other recipes I have made with this type of frosting or filling, call for first making the instant pudding then folding it into the cool whip!

What about regular soda makes it pop? Its the same carbonation.

So I just made these cupcakes according to your recipe, followed the directions TO A TEE, and they turned out like crap!!!! The cupcakes are so soft and have no body to them, that when I tried taking the wrapper off one, the whole thing just completely disintegrated. I'm beyond disappointed. Sorry love, but this recipe is no bueno.
