Coconut balls

A friend of mine was pregnant a while ago and I had her over for supper. I asked her what she would like and she said she was craving coconut. So I made some coconut balls.

The recipe is German but I am sure there are enough English ones around as well:

– 175 gramm powdered sugar
– 1 package vanilla sugar (about 1 teaspoon vanilla extract I would say)
– 125 gramm butter (salty, if unsalted butter add a pinch of salt)
– 30 gramm flour
– 75 gramm coconut flakes (I used the bigger sweetened ones)
– 2 tablespoon rum (or water)

Mix the ingredients together and it will be a sticky mass due to the butter. Let it sit in the fridge for some times and then form balls. Either you serve them like that, or you roll them in coconut flakes. I heated some chocolate and coated them, sprinkling flakes over it to make them look nice.

You could eat them like that, or decorate them some more.
