¡Hola! In honor of Cinco de Mayo tomorrow, I’m reposting links to some of my favorite Mexican recipes. While the outnumbered Mexican army’s defeat of the French at the Battle of Puebla on May 5, 1862 is certainly worth celebrating (unless you’re French, I suppose), any sunny day is good for a Mexican food fiesta. I also included a recipe for my cheater margaritas. They’re not the traditional recipe, but they’re easy to make by the pitcher. (Careful: they’re easy to drink by the pitcher as well!)
Jalapeño Turkey Burgers with Cilantro Lime Sauce
Grilled Garlic Lime Chicken (serve with Cilantro Lime Sauce, of course!)
Pork or Turkey Chile Verde (serve with Cilantro Lime Sauce and rice)
Nacho’Mamma’s Rice Casserole (serve with Cilantro Lime Sauce)
Mexican Chopped Salad (with a different cilantro-lime dressing — this one’s vegan)
Subee’s Cheater Margaritas
Makes about 6
- 1 ½ cups tequila
- 1 cup orange liquor (i.e., Triple Sec, Cointreau, Gran Marnier)
- 1 large can (12 oz) MinuteMaid lemonade frozen concentrate
- 1 small can MinuteMaid limeade frozen concentrate
- 2 cans (12 oz) water
- Lime slices or wedges for garnish
Mix all ingredients in a large pitcher. Pour over glasses packed with ice and garnish with lime wedge.
