Italian Vegetable Salad

I love making a salad that preps for the week and can be used in different ways! This Italian vegetable salad was one that I recently got inspiration from when I went to a local market and saw they had something similar prepped to grab and go. It was so tasty but there were still some ingredients that I didn’t care for that were in it.

I love recreating dishes like this because you know all the ingredients going in them and can have it at home as much as you want!

I made this Italian vegetable salad and served it alongside salmon for a dinner, mixed with tuna for a simple lunch or just as a snack. I didn’t include it in this picture but trust me add MOZZARELLA BALLS in with it and thank me later. So good with this combo!

What to do with an Italian Vegetable Salad:

This salad would make for a great addition alongside a cookout this summer or as a simple side for your dinner. If you love all the flavors of olives, artichokes, you name it—you’ll love this one!

How to make this Italian Vegetable Salad:

The “not so fun” part is prepping all the vegetables by chopping them up! But that’s really all you need to do to get this salad together! Once everything is chopped, add it to a large bowl and add in the remaining ingredients before mixing everything together. You can adjust the seasonings and oils if you want to add more but remember it soaks up while being in the fridge! If not eating this right away at a cookout, you can store it for the week for up to 3-4 days.

Ingredients

  • 2 1/3 cup chopped broccoli
  • 1 cup chopped artichokes
  • 1/2 cup chopped kalamita olives
  • 1/2 cup chopped green olives
  • 1/2 cup black olives
  • 1/2 cup chopped hearts of palm
  • 1/3 cup roasted red peppers
  • 1 garlic clove, minced
  • 3 tbsp red wine vinegar
  • 1 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 tbsp fresh parsley
  • 1/2 tsp garlic powder
  • 1 lemon, juiced
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • Optional: add mozzarella balls!

Instructions

  1. Chop all ingredients.
  2. Mix all ingredients together in one bowl. Adjust seasonings to taste if needed.
  3. Store in the fridge for 3-4 days.
