Grandma Bray’s Rhubarb Bars
It is FINALLY rhubarb season, y’all, and I am HERE for it. These easy peasy rhubarb bars are another Grandma Bray specialty! Not only are they super delicious and easy to make, but they are also sure to give you all the summertime vibes.
Rhubarb Bars
Ingredients
- 3 cups rhubarb
- 1½ cups sugar
- 2 tbsp corn starch
- ¼ cup water
- 1 tsp vanilla
- ½ tsp baking soda
- 1 cup butter
- 1½ cup oats
- 1½ cup flour
- 1 cup brown sugar
- ½ cup pecans
Instructions
- Preheat oven to 375°F
- In medium pan, combine rhubarb, sugar, cornstarch, water, vanilla and baking soda
- Bring to a boil and cook until thick and bubbly then set aside
- Mix nuts, oats, flour and brown sugar then cut in butter
- Place half of crust on bottom of greased 9×13 pan and then spread filling over crust
- Top with remaining topping
- Bake for 30 to 35 minutes
