Skinny Egg Nog!

We have fabulous memories from growing up and arriving at our Great Aunt Sylvia’s and Uncle Dave’s house during the holidays. They immediately served all of the adults Eggnog upon arrival. We remember that even as picky little girls, when our parents let us have a sip of egg nog, there was something about it that we liked. Maybe it was the sweetness or the warming of our throats. But either way, holiday time for us is not complete without at least seeing some eggnog! December marks National Egg Nog month! Now we know you are probably thinking that egg nog is so fattening and full of calories! But never fear– we’ve got a healthy, lightened up version to share! Indulge in this delish and easy egg nog recipe today!

 

Healthy Egg Nog

Skinny Egg Nog

 

Serves 6-8

 

Ingredients

  • 3 large Eggland’s Best eggs (we use Eggland’s Best because they have 25% less saturated fat than other eggs)
  • 3 Tbsp sugar
  • 1/8 teaspoon salt
  • 2 cups skim milk
  • 1/2 teaspoon vanilla extract1/2 teaspoon nutmeg
  • 1 cup whipped topping (optional)

 

Preparation

1. Beat together eggs, sugar, and salt in a large saucepan.

2. Put the heat on low and mix in 1 cup of milk, stirring continuously. Once mixture starts to boil and has thickened enough to coat a metal spoon, stop stirring and remove from heat.

3. Add remaining milk, vanilla and nutmeg and stir.

4. Cover and place in refrigerator until thoroughly chilled.

5. If adding whipped topping, fold in whipped topping and garnish or add stir-ins, as desired. Serve immediately.
