Tenerife’s Bahia del Duque continues to evolve

When you have eight restaurants, a world-renowned fitness centre, an award winning wellness retreat, five swimming pools, and beach access, you’d forgive a hotel if it rested on its laurels. Not least as they probably grew the laurels themselves in their 63,000 square metres of tropical and subtropical gardens.

Bahia del Duque, however, keep moving forward and, in addition to their eight restaurants – including the Michelin-starred Nub – they’ve recently opened a new contemporary Japanese restaurant called Kensei.

Kensei is headed up by chef Víctor Planas, who has over 22 years of culinary experience across several Michelin-starred kitchens, and, it says here, “offers a creative Asian concept that combines avant-garde cuisine with forward thinking fine dining and elegance.”

Perhaps more telling though is the devotion to the local, with Planas working closely with local fisherman for the best quality salmon and tuna, as well as local farmers for the meat and vegetables.

In addition to the simplest, freshest sashimi and sushi, signature dishes include rice cracker eggs royal (salmon, fried quail egg topped with a layer of a spiced yuzu kosho Hollandaise sauce), ginger brioche (rich toro topped with sea urchin, caviar and 24k gold leaves) and spicy tuna served with 53-degree egg and soy for dipping.  

Kensei also has the only sommelier in Spain with trained knowledge of sake pairings and, should you feel the need to swim off any excesses, it overlooks the beach. Sleeping it off too is, of course, also an option.
