One of my favorite go-to chicken salads that is packed full of health and flavor!
WHY you should give it a try:
Chicken
- Chicken is an incredibly common food being consumed today but I wanted to include the health benefits of it as a refresher course since it is such a large part of this recipe
- Chicken is very high in lean protein which is essential for muscle growth and development, and helps support a healthy body weight and aids in weight loss.
- It is a natural mood enhancer because it contains the amino acid, tryptophan. Whenever you’re feeling down, it can increase the serotonin levels in your brain which will enhance your mood.
- This form of poultry is also high in selenium which is involved in thyroid, hormone, metabolism, and immune function.
Cabbage
- The extreme levels of antioxidants neutralize free radicals which makes this an important vegetable for cancer prevention.
- Vitamin C is an important antioxidant and vital for our immune system. While vitamin A keeps eyesight healthy and prevents macular degeneration.
- The high amount of soluble fiber and protein keeps digestion moving at a steady rate which keeps the colon healthy, keeps you fuller for longer and regulates blood sugar to prevent spikes and crashes and has been proven to lower cholesterol.
Edamame
- Edamame refers to a soybean that has been harvested at a time where they are edible yet still immature and green.
- Great source of folate which is great for prenatal health in preventing many birth defects and in adults it helps lower the risk of cardiovascular disease.
- The polyunsaturated fats in soybean oil include heart-healthy omega-3 fatty acids that reduce inflammation and lower the risk of cardiovascular disease.
WHERE to get the goods:
- I typically purchase frozen, organic edamame out of the shell.
- Chick can be readily found at any grocery store but I would recommend finding a high quality source for any kind of meat. I personally love to find local farmers either within a grocery store or at the farmer’s market so I can learn about their farming practices and techniques.
- Cabbage is readily available year round at many stores.
HOW to enjoy it:
- This dish is great for lunch or dinner.
- It can be eaten as side or a meal and serves 2-4 respectively.

Shredded Chinese Chicken Salad

Serves 2
A fantastic light salad with an asian twist!
For the salad
- 2 chicken breasts, cooked and shredded
- 3/4 head of napa cabbage
- 1 cup purple cabbage
- 1 cup carrots, shredded
- 1 1/2 cup edamame, shelled
- 1 cup slivered almonds
For the dressing
- 1/4 cup soy sauce
- 1/4 cup rice wine vinegar
- 1/4 cup sesame oil
- 1 tbsp dry mustard
- 1 tbsp honey
- Salt and pepper, to taste
For the salad
- Preheat oven to 375.
- Rinse both cabbages and thinly slice crosswise.
- In a large bowl, combine chicken, both cabbages and carrots.
- Blanch edamame in boiling water until bright green, drain and set aside to cool.
- On a baking sheet, arrange slivered almonds in a single layer. Bake 6-8 minutes.
- Remove from oven and set aside to cool.
- While ingredients are cooling, make dressing- instructions to follow.
- Add cooled edamame to bowl with dressing and toss.
- Garnish with almonds and serve.
For the dressing
- Whisk together, taste and add salt and pepper to your liking.
Notes
- - Use two forks to shred meat easily but be sure to allow the meat to cool first.
- - If this salad will not be consumed all at once, I dress only what is on my plate to prevent the cabbage from getting soggy while waiting to be devoured.
