Simple Paleo Pancake

Paleo PancakeJoining The Simple Proof this week is guest blogger, Kylie from Yeah, Immaeatthat.  You may remember her fresh summer ice cream, well she’s back with another delicious recipe for you to enjoy and it looks like a good one!  She’s sharing a really simple pancake that’s made with 5 ingredients.  Sounds like simple proof you can have a healthy and delicious breakfast, fast.

This pancake has been my go-to.  It’s inspired by this brilliant pancake from Anne!  It’s quick and easy and helps me GET OUT THE DOOR.  Nearly everything bothers my stomach in the morning, so I have to be careful with what I eat.  What I’ve been loving about this pancake so much is that it doesn’t bother my stomach AT ALL.  Which is kinda a big deal for me.

On to the pancake.  If you don’t want it to taste like a sponge…you must be careful with the amount of coconut flour you add.  It’s a slippery slope so don’t go crazy.  No more than 1 tablespoon + 1 teaspoon…you got me?  You add too much coconut flour and you’ve got a sponge for breakfast and nobodies got time for that.

With two eggs and a banana, the pancake is rather filling.  So it doesn’t necessarily need any toppings, but if you’re gonna throw in add-ins + toppings, my favorite combo has been blackberries + coconut peanut spread.  But again, the pancake doesn’t really need it, it’s delicious plain.

You want that forkful in your life.

  1. Very cool! I’ve never used coconut flour before but I love coconut. And it’s great that you provide proportions for one pancake. Easy to make for breakfast. How do you store coconut flour at home? I’m assuming that with the fat content, it’s best to avoid room temperature?
