Maureen’s Space Salad is an easy and economical dish, used to stretch out ingredients when heartier fare is either scarce or just too much trouble! This is a very nice salad to serve chilled on a hot day.

Start with two cups of cooked rice (preferably jasmin, but any plain white rice will do.)

Serve it out into six bowls.

Shred a quarter of a head of lettuce into long, thin strips and heap on top of the rice.

Dice a large onion and divide equally in the dishes.

Slice a large tomato into six parts and place one slice in each dish.

Crumble a bit of parsley over all.

Put bowls in refrigerator to chill, then serve oil & vinegar or Italian dressing.

Very refreshing on a summer day, and the rice is quite filling.
