Growing up, Red Ribbon’s Black Forest cake was what I regarded as “the grown up’s cake”. It looked quite sophisticated-dark chocolate shavings set against while frosting, then topped with more dollops of cream and dotted with red cherries. It’s been a while since I’ve had it, so when a friend from Red Ribbon shared that there’s a “chocolatier” Black Forest, I figured I’d give a try.

I remembered one of my first bites of this cake back when I was a kid. How grown up I felt. It looked and tasted different from the usual mocha birthday cakes that would be served during family birthday parties. Traditional Black Forest cake, if I recall correctly, had brandy in it. The cake was soaked in the brandy (a certain kind distilled from cherries).
