Beautiful Bacon
Let’s talk bacon! Who doesn’t like bacon? Come to think of it, I do have a friend that doesn’t like it. There is obviously something wrong with her! I suggest therapy.
One of my closest friends is obsessed with the stuff. I always try to send her new recipes. I once bought her a roll of packing tape with pictures of bacon on it. I also found a bacon scented hanging car deodorizer or maybe I should say – odorizer. It really reeked. She misplaced it and couldn’t figure out why there was an awful smell in the family room. It was all my fault.
Anyway, I was watching Down Home with the Neelys on the Food Network and they had a new way of cooking bacon with brown sugar. It is transcendent. You won’t believe how good this is…
Brown Sugar Bacon
Serves 4
1/2 cup brown sugar
1 Tbs Dijon mustard
1/4 lb sliced bacon
Preheat oven to 400 degrees F.
In a large plastic zip-top bag, combine brown sugar and mustard. Add bacon and toss to coat.
Line a baking sheet with aluminum foil or parchment paper. Place a cooling rack on the lined baking sheet. Put bacon on rack and roast in oven for 20 minutes. Let drain for a few minutes on the rack and serve.
Love brown sugar bacon, though I have never seen mustard on it. I will have to try it!
