This recipe is courtesy of my sister-in-law, Leigh. And because she lives in LA, I’ll let this one slide as a white trash meal. Because truth be told, after I read the recipe I thought, “umm, this sounds tasty”.
And to be totally honest, I would be perfectly happy adding this meal to my regular weekly dinner menu rotation.
I’m just saying.
6 skinless, boneless chicken breasts
6 slices swiss cheese
1 can condensed cream of chicken soup
1/4 cup milk
2 cups herb seasoned stuffing mix
1/4 cup butter
(for a thicker consistency, use more butter and less milk….and for the love of pete, don’t use low fat soup! it changes the whole taste.)
DIRECTIONS:
preheat oven to 350 degrees
arrange chicken in a greased basking dish, top with swiss cheese slices
combine soup and milk and stir well. spoon mixture over chicken.
mix butter and stuffing……sprinkle over top (*use lots of this! when it cooks it’s all goopy and yummy)
cover and bake at 350 for 50 min or until cooked.
