I Love Salad + The Chocoholics Pledge

 Accidental tasty salad. Sometimes random leftovers make great meals.

The week is coming to an end, which means I am trying to eat all the leftovers before cooking a whole new batch of dishes.

A mish mash of flavors that surprisingly went well together.

A bed of arugula and fresh spinach, tossed in Shiitake Sesame Vinaigrette.

Top with roasted butternut squash and crumbled goat cheese.

And homemade baked falafel.

I roasted butternut squash and have been eating it this whole week.  I simply tossed in a little olive oil, a sprinkle of cinnamon, brown sugar and sea salt and baked until tender. Topped with toasted almond.

A taste of crumbled goat cheese with each bite makes this salad a winner.

Today was National Chocolate Day so I made Double Chocolate Cherry cookies (will post recipe soon).

Because I chocolate, on the occasion of Chocolate Day, I wanted to show my creativity with chocolate. This is my chocolate art for the day 🙂

It has been a very busy Thursday, but the simple joys of life like making  a simple tasty  salad and celebrating my love for chocolate are the little things that inspires me every day.

  1. I can’t get enough of chocolate too! I just bought a bag of chocolate chips last night to add to my oatmeal, pb sandwiches, to eat alone…and make chocolate covered expresso beans!

    • Angela, thanks for stopping by my blog 🙂 You’re making your own chocolate espresso beans? That’s cool. I love eating them but I thought I would have to get special espresso beans that aren’t too hard to make the chocolate covered ones.

    Your eats look fantastic! I would enjoy nibbling every delish pic on this page. Roasting up a bunch of squash on sunday nights is one of my favorite things to do – it sees me through to wednesday, usually.

  9. I am able to resist almost anything except for chocolate. I sometimes will sit in front of the TV with a bag of chocolate chips and go at it. It isn’t pretty!

    Falafel on a salad is a great addition! It looks delicious.

  11. I’ve never seen the chocolate pledge before! I think I need to print out copies for all my friends. Also, I love when random left overs “accidentally” make a great dinner. It makes up for the times when leftovers do not make a good dinner.

  14. Hey Lea! I love mish mashing all my leftovers into a meal. I’m doing that tonight with some leftover soup. I’m mixing together leftover soup, leftover japanese fish cake, and leftover korean rice cake with fresh ramen noodles. I can’t WAIT. i’ve been looking forward to it all day.

    Um, i didn’t know that today is national chocolate day! how did i not know that? I will definitely celebrate when i get home.

  15. I love salad and crave it when I’m traveling to places that don’t have the variety of fresh produce that we’re so lucky to have here in SoCal. I’ll have to try baking my falafel’s next time – looks delicious – couldn’t figure out what it was at first 🙂

I have a suggestion for an addition to your chocolate pledge: I don’t know how to rhyme this, but add a statement that the chocoholic will buy only slave free, organic chocolate (organic chocolate is usually slave free). I know this is a hard thing to get one’s head around, but much of the chocolate today is made from cocoa beans harvested by child slaves in West Africa. Kinda takes the joy out of eating chocolate when you know this fact. See my blog entry on “Chocolate, Slavery and Our Collective Guilt” if you want to learn more about this.
