Menu: Lindsey's Engaged!
My friends Lindsey and Brock got engaged two weeks ago, so the girls want to get together to celebrate (ladies only!) Each time one of us has gotten engaged we have gotten together and gabbed, munched and gossiped all afternoon about wedding plans, boys, and life. So fun! I can’t wait for Sunday!
I am having trouble deciding between two menus that have been brewing in my brain, and I need your help!
Menu A: Mexican Love
To start…
*Blue corn chips & homemade guacamole
For dinner…
*Make your own chicken fajitas (chicken breast, peppers, onions, mushrooms, cheese, tomatoes, avocado)
*Black beans
*Mixed greens salad with cucumbers and lemon dressing
For dessert..
*Lindsey’s chocolate chip cookes
*Fresh berries & fresh whipped cream
OR
Menu B: Proposal Supper
To start…
*Mini caprese stackers
For dinner…
*Real Simple’s Lemon Chicken with Olives
*My mushroom risotto
*Roasted asparagus
*Mixed greens with walnuts, goat cheese, and apples in a balsamic honey dressing
For dessert…
*Lindsey’s chocolate chip cookies
*Fresh berries with fresh whipped cream
Both menus will allow me to still enjoy my evening while eating well and sticking to my goals, yet indulging my friends a little bit, but I really can’t decide which will be better! Vote please!

i vote for menu 1 also! With margaritas, of course!
Hmmm… that’s a tough call. I’m going to have to vote for Menu A because “make-your-own” anything is lots of fun, and I looooove guacamole π Have fun!
Ooh, both are fantastic, but I think I’d be inclined to do A, as it’ll be easier to entertain π
I’m with the others! Menu 1 sounds fun and make your own fajitas are always a crowd pleaser in my opinion! π
Oh, I you said caprese anything and MUSHROOM RISOTTO and i said…. sold! i think it’s much dressier, celebration-like food. π
I agree with ttfn300- both sound great but A would probably be easier so I’d go with that π

Wow this is a hard decision….both sound SO delicious…esp the risotto! I think #1 sounds more “fun”, but #2 is sounding really appetizing to me right now, so I’ll have to go with #2.

I would go for MEXICAN for sure! It is something different that you you never ever eat! Maybe sangria would be a lot of fun too!
I think menu#1 would be the most fun!

I vote for menu #1 – a more relaxing menu makes for a more relaxing and enjoyable dinner party! and most likely less work on your part =)
not sure if it’s too late to vote buuuuttt…the mexican menu sounds more fun…and tequila should probably be involved. π
