EASY vegetarian mexi salad
This salad is amazingly filling, easy to make, and healthy! 3 great things.
Combine in a bowl:
- 1.5 cup baby spinach,
- 1/2 cup black beans
- 1/4 cup canned corn
Mix in a bowl, then pour over salad:
- 1 tsp olive oil
- 2 tsp balsamic vinegar
- 1/2 tsp
Top with 6 or 7 “Garden of Eatin'” blue corn chips
Enjoy! This whole delicious salad is only 305 calories, 15g fat, 60g carbs, 125mg sodium
Yummi!! I love all 3! Baby spinach is great for you because it’s dark leaves rather than iceberg lettuce. I’ll give it a try. Thanks for sharing!
