Family- and Budget-Pleasing Strawberry Cobbler

I’ve been reading many beautiful food blogs this week, as I love to get good ideas from talented home cooks, chefs and bakers.  It’s hard to navigate them all, trust me, as there are thousands upon thousands of them! I’m just thankful that you’ve come across mine, because I am so happy to share what I’m learning, writing, baking, and cooking with you!

Anyway, I have found many unique recipes that I will try out, alter a bit, try again,  and so on, but this one caught my attention because I have never had a strawberry cobbler.  My boys had one at a local restaurant when I wasn’t with them, and came home to tell me all about how much they loved it.  When I saw this one yesterday on the “Simply Red/Red at Home” blog, I decided to try it out for them.

The recipe is very easy to make, and is really that simple, standby recipe you’ve probably made many times before with peaches.  I wondered how it would be with the strawberries, and started making it right away for a quick dessert before the boys left for work, planning to serve it with vanilla bean ice cream.  Looks pretty good, doesn’t it?


Here’s the recipe: 


Strawberry Cobbler

3 c. fresh strawberries, cut into fourths (can use 3 c. frozen strawberries,thawed)
2 c. sugar
1 stick butter
2 tsp. baking powder
3/4 c. flour
1/2 tsp. salt
3/4 c. milk
2 Tbsp. sugar

Combine strawberries and 1 c. sugar.(If you’re using frozen strawberries,mix with only 1/2 c. sugar) Melt butter in a 9×13 dish. Mix remaining 1 c. sugar, flour, baking powder, salt and milk together. Pour into dish. DO NOT STIR. Top with the strawberry mixture. DO NOT STIR. Bake at 350 for 45 minutes.Let cool for about 5 minutes and sprinkle 2 Tbsp. sugar over crust. Makes 8-10 servings.

Tips: I added a little more than three cups of sliced berries, and really think it could use even more; try it with four cups if you have them. Also, I’d cut the cup of sugar that is mixed into the berries in half.  It was really too sweet, in my opinion. I had no complaints from my family, but I don’t think they’d miss that extra sugar. I didn’t add the two tablespoons of sugar to the top crust, either.  Right now berries are pretty sweet, so the extra amount of sugar isn’t that important, in my opinion.   Also, I think a cup of blueberries or blackberries would be a nice addition to this cobbler. It would be pretty, too!

When I served the cobbler with the scoop of ice cream, I drizzled a bit of the juice from the cobbler pan over the ice cream, which was pretty and tasty.  

The next time you need a quick dessert and have an abundance of currently inexpensive strawberries, you might like to try this out!   Enjoy!
