1 lb. (approx.) filet mignon medallions (4 in total)
1 tbs. butter
1 tbs. olive oil
¼ cup coffee
2 tbs. black pepper
2 tsp. salt
½ tsp. onion powder
½ tsp. garlic powder
a pinch of crushed red pepper
- Heat oven to 375 degrees Fahrenheit.
- Using left over morning coffee grounds heat coffee over medium heat until dried out. (If using instant coffee skip this step)
- Add spices, salt, and pepper and allow to cool.
- Heat a large skillet with butter and oil to high.
- Coat top and bottom of each fillet with coffee blend.
- Sear for 2 – 3 minutes per side.
- Put pan in oven for 3 – 5 minutes for medium rare doneness.
- Allow to cool for 5 – 8 minutes before serving.
