Quick Cacciatore

Typically, Chicken Cacciatore takes several hours to make. You’ll be pleased to know that this version from Nigella Lawson is super speedy and just as good! Classic Italian comfort food rendered Brit-style, the recipe combines chicken with chopped tomatoes, cannellini beans, rosemary, and bay leaves. There is only one pot to wash up, and nothing more than a green salad and a bit of crusty bread are needed to complete this quick and warming supper.

Quick Cacciatore

1 tbs. olive oil
½ cup pancetta cubes
1 small onion, diced
2 tsp. finely chopped dried rosemary
2 garlic cloves, minced
6-8 boneless, skinless chicken thighs
½ cup white wine or dry white vermouth
14 oz. can chopped tomatoes
2 bay leaves
½ tsp. sugar
14 oz. can cannellini beans, rinsed and drained
chopped fresh parsley to serve

In a pot large enough to hold all the chicken in one layer, combine the olive oil, pancetta, onion, and rosemary. Cook over medium-low heat for 6-7 minutes, until the pancetta begins to brown and the onions soften. Add the garlic and cook 1-2 minutes more.

Season the chicken with salt and pepper and add to the pot. Cook 3-4 minutes on each side to brown slightly. Add the wine and let it reduce to half, then add the tomatoes (with their juices), bay leaves, and sugar. Cover and reduce the heat to a simmer for 20-30 minutes. Add the beans and check the seasoning. Cook a few more minutes and serve sprinkled with parsley.
