Paleo Sweet Potato Pancakes

I was challenged by my good friend @nutty4nutrition to make sweet potato pancakes! Actually, she challenged everyone on Instagram to make pancakes this whole week, I just chose to make sweet potato pancakes for today’s theme!

These were incredible, and surprisingly easy to make and flip. They fluffed up quite nicely and smelled just like real pancakes while cooking!

I topped them with 2 slices of chicken bacon, which I diced and fried until super crispy and real maple syrup! Absolutely incredible!

Ingredients – Makes 1 Serving
1/3 cup mashed sweet potato (baked + mashed)
2 egg whites
1/4 cup almond meal
2 tbsp unsweetened almond milk
1/2 tsp baking powder
Pinch of salt

Method
1. Mix your mashed sweet potato and egg whites well. Mixing the egg whites well will help the pancakes get more fluffy and light.
I chose to use baked sweet potato that has been mashed instead of boiled because it has more texture and helps the pancake hold together better. You also end up getting very small pieces of sweet potato in the pancake, bonus!
2. When that is mixed well, add almond meal, almond milk, baking powder and salt.
3. Pour mixture 1/4 cup at a time onto a heated skillet. You shouldn’t have to spread it around, but you might have to.
4. Cook over med-high heat for about 1 1/2 mins on each side.
5. Serve with your choice of topping!

    What do recommend for those who cant consume almonds (or any tree nut actually…im allergic)

    Im allergic to tree nuts, what do you suggest as substitute for almond meal and almond milk?

      Almond meal can be substituted with 1 tbsp coconut flour (add as last ingredient) and almond milk can be substituted with any milk of your choice. Flax milk, Rice milk, Coconut milk, whatever you use!

      You can use regular gluten free flour.

    is it possible to do this without egg? would love to make these for a friend, but she’s had to cut diary & eggs out of her diet due to allergies.

      You can try it, not sure how it would hold together though. The egg whites really help fluff them up as well. Let me me know how they turn out if you do try it please!

        It doesn’t work without eggs… I tried yesterday and the pancakes didn’t hold together at all.

      You can make your own buy pulsing almonds in a food processor. You can find it an major grocery or bulk food store.

    I was just wondering what kind of “healthy” flour I should get, when making any kind of pancakes? I don’t know if almond flour or coconut flour will be best for different kinds of pancakes.

    Also, I just want to say thank you for having this blog! It’s really been helping me find healthy food that’s TASTY! ๐Ÿ˜€

      Aminah, thank you so much! It really depends on your needs. I follow a paleo diet so a lot of my pancakes use almond or coconut flour. Bobs red mill has a lot of good choices though. You can use oat flour, gluten free all purpose flour, they have a whole grain pancake mix, all gluten free. (I’ve tried all of these and they are great)

    I gotta say…gurllllllllll! These pancakes rock! I’ve been looking for a simple, non-coconut flour type pancake for so long, one I could make sweet or savory and this fits the bill to a T! Made them with a touch of rosemary and garlic to go with sardines and OMG, im glad I only made 1 serving…id have devoured it ALL! i will be blogging about these on my site and mention you on instagram if you don’t mind, of course ill be linking it back here. These are just too good not to share.

    Instead of eggs (alergies) replaced with egg substitute. Here in Oz I can get a product called No Egg by Orgran, and this works well instead of eggs.

    Are these pancakes supposed to have a different texture? Because It cooks like a regular pancake except the inside which is a mushy mashed potato mixture.

    I am making another batch of these pancakes right now! My 7yr old and 3yr old give these pancakes 2 thumbs up as they are stuffing pieces in their mouths and asking for more. I followed the recipe but added one egg and one egg white for a few more calories for my boys at dinner time. One batch made about three small pancakes for me. We will definitely be making these again and again.

      Oops, I didn’t add more eggs. I mean I used one egg and one egg white instead of 2 egg whites.
