menu plan monday: 02.18.13

Still playing catch up in a few areas, so this week’s menu plan is going to be matching what’s in the freezer with what-ever happens to work on a particular night. It’s kind of an eclectic week. There’s at least one night that I’ll be making dinner for the family and reheating leftovers for me, but it’s getting the freezer cleaned out and I’m okay with that.

I’m at that point in this season that I’m tired of winter clothing, tired of the heater and tired of winter foods. We enjoyed a few days of spring-like weather and the fact that there’s rain in the forecast with a high that’s 20 degrees lower than yesterday isn’t sitting well with me right now. It’s time to put a little effort into finding some new regular dinner ideas.

I’m not sure which night these will be eaten, but here are the options:

Chocolate Chili (from Well Fed – should double to freeze)
Salad

Chicken and Vegetable Lo Mein (made with pork)
White Rice (cooked in bone broth – for the family)

Crockpot Chicken with gravy
Mashed Potatoes
Mashed Cauliflower (me)

BBQ Drumsticks
Kale with Carrots (in the pressure cooker – this recipe alone makes the pressure cooker worth it’s price)

Spaghetti with Meatballs (the kids have been requesting – I’ll probably just do meatballs and salad)
Salad

Orange Chicken (kid’s choice – not paleo or GF, so I’ll probably eat leftovers)
Broccoli

Sandwiches/Lettuce Wraps
Strawberries
Carrot sticks

    • Yes! And it’s amazing! My husband and kids love it with oyster or saltine crackers, but I love to put it over mashed sweet potato. It’s our favorite and it freezes well – definitely worth a try!

  1. Spring fever? I’m still waiting for a good snow day. 🙂 But no matter the weather, I still get stuck in food ruts. We’re trying an easy GF orange chicken recipe tonight. It isn’t paleo, but I’m hoping it’s a nice change to our food routine.
