My everyday vegetarian treats with a twist!

Brunch Sandwich

We invited a friend over for late brunch/early lunch. We were not sure what to make, but in the end we came up with this.  You can serve this over a bagel, but we opted to use our homemade mixed seeds and oats bread!

The sandwich has the following layers: one piece of bread with coriander-coconut chutney spread , mock meat burger patty, potato rosti (grated, seasoned potato), sautéed spinach, sautéed mushrooms, and grated cheese. Finally topped dollop of chutney and fried egg! Sprinkle with salt and pepper. To add a bit of flavour to your veggies, you can add garlic, black pepper, salt, or other seasonings you may have while sauteing them.

The beauty of this dish is that most of the layers can be prepared ahead of time and reheated when ready to assemble. Again this is only one version, you can use your favourite chutneys, veggies, or burgers. The beauty about cooking is that you don’t have to have all the ingredients and don’t always have to follow it 100% ! 🙂 As you will soon find, I hardly follow recipes all the way through.

I would love to hear about your variations!
