Gluten Free Chili on Corn Waffles

1 cup gluten free flour

3/4 cup cornmeal (corn grits)

1/3 cup vegetable oil

½ teaspoon salt

1 ½ cups milk

1 or 2 eggs

Stir together to make batter. Cook in waffle maker. If using later, reheat waffles in toaster.

Chili

1 pound (450 grams) ground beef

1 onion

1 can diced tomatoes

1 can gluten free baked beans

1 can black beans in chili sauce

½  teaspoon fresh chili

½ teaspoon salt

1 tablespoon gluten free taco seasoning like Old El Paso or my recipe

1 can gluten free pasta sauce or tomato puree

Brown and drain ground beef with onion. Add the rest and cook on high in crock pot about 5 hours.

Cheese Sauce

¼ cup full cream powdered milk (or use milk instead of water)

2 tablespoons corn starch (corn flour)

2 tablespoons butter or margarine

1 cup water (or milk)

1 cup grated cheese

½ teaspoon fresh chili (optional)

Mix dry ingredients. Add water and butter. (Or melt butter, add milk, stir in corn starch paste.) Cook over medium heat until thick. Stir in cheese and chili until melted. If desired, keep warm in small crock pot.

Serve chili over waffles topped with cheese sauce. Garnish with chopped olives if desired.
